This ramen is characterized not by immense flavor, but by its umami. As the ingredients are relatively simple, it is easy to create the elegant taste along with the pork fillet, green onions, bamboo. Depending on the shop, you may also try this dish with dried noodles. Although there are various tastes, the representative of Sapporo ramen is miso ramen. When I visited Atami, I stayed at the Hotel New Akao Royal Wing, a beautiful and modern hotel with ocean views. Despite an impending typhoon during my stay, the moody skies and big waves of Sagami Bay captivated me each morning when I opened the shades. The rooms are equipped with a large soaking bath and yukatas to wear in your room or to explore the hotel. Especially when it’s looking at me with a face full of scary teeth. While the eel served in Mishima is raised in other parts of Japan, it’s special because it’s kept in Mount Fuji water for several days before becoming dinner. I actually prefer them cold and dipped into the sauce because you can better appreciate the true buckwheat flavor that makes these noodles so special. Tsuta is an award-winning ramen shop in Tokyo’s Sugamo area. Established in 2012 by Yuki Onishi, it combines Japanese and French culinary techniques to create a unique take on traditional noodle soup dishes. Its signature umami flavors come from dashi and broth aged in wine barrels. Ramen from Onomichi utilize a shoyu soup flavored with dashi fish stock, which is usually made from local seafood caught in the Seto Inland Sea. Onomichi Ramen noodles are typically thin, straight and firm and the dish is often served topped with green onions, chashu, menma, and a bit of pork lard for flavoring.
